We are trying to eat healthier around our house and while I have eliminated bread and rolls every night with dinner and I'm getting better about using lean meat and reduced-fat, low sodium ingredients, our main problem is Allie and I both love to snack! She is always
starving when she gets home from school and wants to graze until dinner. I stock all the usual healthy snacks... granola bars, fruit, cottage cheese, string cheese, yogurt, etc. So we're good on our calcium and fruits... but what about veggies? I'm not the best about cooking vegetables, I find I make the same ones over and over (corn, broccoli, and green beans). We love asparagus, okra and many others, but I am intimidated to cook them. Anyone have any good easy recipes or tips?
I did find one great way to incorporate some veggies into our snacking. I make our usual smoothie...
- 1 cup non-fat yogurt
- 1 cup strawberries and blueberries
- 1 sliced banana
- 1 cup ice
Then I added...
- 1 cup V8 Strawberry Banana Juice (full serving of fruit and vegetables)
- 1 1/2 cup organic raw spinach
It looks a little scary and very green at first, but as you blend the evidence disappears. And the best part? It does not taste any different!
